Hi Julie, it’s fantastic to bake the evening before. Don’t wrap the entire layer in plastic. The cake is moist and an excessive amount of will construct up inside the wrap. Just place wax paper or plastic wrap over top of the layers. Usually I would say yes, nonetheless with this cake, no.
